Dan Fox, our Head of Coffee, leads a team at our Witney Roastery to expertly taste, select, and roast our coffee. We have invested heavily in recent years in one of the most technolgically advanced roasteries within our area. Using the very latest roasting equipment across three systems and software which gives us the ability to maximaise quality and consistencey at every roast.
Once carefully packaged, it is then shipped to customers in the UK and beyond. With a global understanding of coffee harvests occurring at different times throughout the year, Dan collaborates with a team of specialised importers to ensure fair pay for farmers. As a company, we also prioritise investing in community projects that benefit the communities we depend on for our coffee.

About This Coffee
Cauca is located in southwest Colombia, nestled between the Pacific coast and the Andean mountain range. The region covers over 29,000 square kilometers and is home to approximately 1.3 million people. Its unique geography creates ideal conditions for high-quality coffee production.
Coffee in Cauca is typically grown at elevations ranging from 1,800 to 2,100 meters above sea level, where cooler temperatures slow cherry maturation. This extended growing cycle allows sugars and acids to develop more fully, resulting in coffees with greater complexity and clarity.
The region’s volcanic soils are rich in minerals and play a significant role in shaping the cup profile, contributing to bright acidity, clean structure, and balanced sweetness.
Coffee production in Cauca is shaped by a long tradition of smallholder farming, where most producers work plots averaging just 0.8 hectares. These farms are typically family-run, with knowledge passed down through generations and a strong emphasis on careful, hands-on work at every stage of production. Coffee cherries are selectively hand-picked at peak ripeness, allowing farmers to maintain quality and consistency despite small harvest volumes. Processing is carried out using traditional washed methods, with close attention paid to fermentation, washing, and drying. This meticulous approach helps preserve the coffee’s natural clarity and balance, allowing the bright fruit acidity and subtle nutty sweetness of the region to shine. Rather than relying on large-scale industrial systems, Cauca’s farmers prioritize quality-driven practices that reflect both their land and their craftsmanship, resulting in coffees that are clean, expressive, and highly respected in international markets.
