About This Coffee
A portion of sales from this coffee supports the El Oso project in Peru, which is dedicated to promoting environmental sustainability in the region. Many COOPAFSI producers cultivate their coffee in the buffer zones of protected natural areas in Northern Peru, where species such as the Spectacled Bear and Tapir Andino face threats. The El Oso fund aids in conserving and safeguarding these natural ecosystems while also enhancing producer engagement and livelihoods.

A notable achievement of the El Oso project was the introduction and training in organic farming practices within this delicate ecosystem. This method reduces the impact on native species and fosters a culture of wildlife and endangered species protection among the coffee farming community.

Located at the northern tip of the Cajamarca region in San Ignacio Province, the Rio Canchis divides the country from Ecuador. For the yellow honey process, tanks are used to remove floaters from the ripe cherries, and the pulped beans undergo an eight-hour dry fermentation in the tanks. The beans are then transferred to a mesh tray in a poly tunnel, where they remain for 15 to 18 days until they are dry.
